Imagine a technique practiced since the ancient time of the Romans. At the centre of Sant’Ambrogio di Valpolicella, the Aldegheri family has spent 7 decades respecting the tradition of 2 millenia, and translating it into wine.
At the core of Aldegheri’s philosophy is the respect for a technique from antiquity: appassimento, the slow drying of hand-picked grapes on wooden racks from October through to February, until water surrenders to concentration. What remains is something far more intense than what was harvested with astonishing depth and lushness of flavor. And, like a gift from nature, to balance out the depth of those dried grapes, the land sprinkles on them a signature mineral quality that runs through everything they make.
Corvina, Rondinella, Molinara, and some rarer regional grapes come together with a profound structural firmness while still being lifted by the minerality. These wines with architecture are not immediately giving, but deeply satisfying over time.
