CREATION
GRAPE: 100% Syrah.
TERROIR
From a dedicated Syrah parcel at Domaine Saint-André in Mèze, Hérault, on the shores of the Thau Lagoon, facing Sète and Mont Saint-Clair, close to the Mediterranean Sea.
WINEMAKING
The grapes were harvested at perfect phenolic maturity. 80% was traditionally vinified with destemming, crushing and a three-week maceration in concrete tanks. Fermentation took place at 25–27°C with daily pump-overs, followed by malolactic fermentation in tank. The remaining 20% was vinified by carbonic maceration using whole clusters, without mechanical extraction.
AGEING
The final blend was aged in stainless-steel tanks for 7 months.
TASTING NOTES
SIGHT: Deep purple with violet reflections.
SMELL: Intense, refined aromas of ripe black fruits interwoven with spicy notes.
TASTE: Velvety and balanced, combining freshness with generosity; long and elegant on the finish.
