VINIFICATION AND MATURATION
The grapes are harvested and fermented separately. After a cold maceration, fermentation takes place in the traditional manner. The maceration lasts for 2 weeks, with regular punch downs to extract delicate aromas and tannins. The wine is aged for 20 months on lees, including 16 months in 400-litre oak barrels.
TASTING NOTES
The nose is expressive, with aromas of blackberries and sour cherries, followed by spicier notes. On the palate, the tannins are ripe and silky. The round mouthfeel is supported by a pleasant freshness. An elegant and well
structured wine.
FOOD AND WINE PAIRINGS
Enjoy Folie d’Inès Rouge at room temperature, paired with cooked lentils, pasta with sun-dried tomatoes and oregano, or grilled meats.
