GRAPE: 100% Chardonnay.
TERROIR
Selected Chardonnay parcels from Domaine Saint-André in Mèze, Hérault, on the shores of the Thau Lagoon, facing Sète and Mont Saint-Clair, close to the Mediterranean Sea. The vineyard benefits from a Mediterranean climate tempered by maritime influences and predominantly clay-limestone soils.
WINEMAKING
Fermented in new 400-litre French oak barrels. Medium and medium-plus toast levels create a distinctive, gastronomic style inspired by Burgundy.
AGEING
Aged on full lees for six months, bringing roundness, richness and depth to the wine.
TASTING NOTES
SIGHT: Brilliant pale gold.
SMELL: Refined aromas of white fruit, lifted by delicate toasted-bread notes.
TASTE: Silky and generous, with a broad, well-balanced texture and an elegant, lightly woody finish.
