maximum of 35-40°C, so as not to alter the wine and preserve certain aromas.

Vinification:
Mechanical harvest
Low temperature pressing, inerting of the presses.
Low temperature fermentation in stainless steel vats
Aging in thermoregulated stainless steel vats on fine lees to preserve the fruit and freshness and bring volume to the mouth.
Service: Serve very cold – ideally chilled
Tasting: Citrus notes (lime, grapefruit), blackcurrant, bigarreau cherry and raspberry.
Visual appearance: Pale, salmon-pink color
On the nose: Notes of yellow grapefruit (tart and sweet), white peach and raspberry

Cold zucchini and basil velouté,
Provençal tian with fresh goat’s cheese,
