What are tannins in Wine?

In fact, in our Rhône Valley wines, tannins play a central role in every tasting. They come from both the grape varieties we cultivate and the methods we use in the cellar. But where exactly do they come from, and why do they influence the tasting experience so much? We’ll explain everything.
Where do the tannins in wine come from?
The answer is multifaceted: tannins come as much from the vine as from the choice of grape variety, the terroir, and the winemaker’s techniques in the cellar. In the vine, these phenolic compounds are naturally present in the skin, seeds, and sometimes even the stems of the grape. Their presence, whether pronounced or not, also depends on the grape variety. Some, like Syrah, which is very common in Xavier Vignon’s wines, are particularly rich in tannins. Conversely, Merlot or Gamay offer softer tannins, resulting in wines that are more approachable at a younger age.
The terroir also plays an essential role. Indeed, the composition of the soils, the exposure, the climate and the ripeness of the grapes at the time of harvest directly influence the tannic quality of a vintage.
Finally, tannins can also come from the winemaker’s interventions in the cellar, particularly through their choice of the type of wood used for the barrels.

How does winemaking influence the presence of tannins?
Tannins are naturally present in grapes, but to become wine, they require some human intervention. Everything happens during maceration, when the juice remains in contact with the skins and seeds. The longer this stage, the more structure and tannic richness the wine gains.
This is why red wines, which benefit from prolonged maceration, are generally much more tannic than a rosé or a white wine, where contact with the solid parts of the grape is very limited.
The winemaker’s role is crucial here. They choose the maceration time, the fermentation temperature, and the techniques to be used, such as punching down, pumping over, and pressing. All these actions shape the quantity and texture of the tannins. Added to this is barrel aging: depending on the type of wood used, tannins can be added to those of the grapes, either strengthening or softening the final structure of the wine.
What is the role of tannins in wine?
In practical terms, these compounds, invisible to the naked eye, play a crucial role in red wines: they contribute color (wines rich in tannins are often darker), structure, and above all, longevity. A wine with well-balanced tannins can evolve over time, gaining suppleness and roundness as it ages in the cellar.

First, keep an eye on the serving temperature. Serving a wine slightly warmer allows the tannins to soften and round out on the palate. Food and wine pairings also play a key role: the protein and fat content of red meat or aged cheese naturally softens the firmness of the tannins. Finally, time remains the surest ally: a very tannic wine often gains in balance and elegance after a few years of aging.
