Grape Variety: Corvina, Corvinone, Rondinella and other indigenous vines to complete.
Vineyard: The vineyard is located in the hills to the north-west of Verona, characterised by red and brown soils on marl of Cretaceous age and compact red soils on Eocene limestone.
Harvest: At the beginning of October, after slight overripening. Harvesting is by hand, selecting the best bunches for subsequent drying.
Vinification: After careful raisining, in early February the grapes are destemmed and crushed; during fermentation the must temperature is stabilised at around 15°C. A long maceration (25-30 days) with daily pumping over continues the fermentation process. After racking (i.e. separation of the marc), 2-3 racking is carried out on clean wine. Around May-June, the wine is transferred to wood for maturation. After a further racking to clean wine, the wine is bottled and matures for several months.
PietrDolce & Cucina: Excellent with pandoro and typical Veronese desserts such as nadalin, it goes well with all dry pastry, with dark chocolate, and deserves to be tried with spicy cheeses. Serve at room temperature.
