Domaine Saint André is located in Mèze, in the Hérault region, on the shores of the Thau lagoon, facing Sète and Mont St Clair, just a stone’s throw from the Mediterranean Sea. Since 2023, we have introduced a Sélection Parcellaire range to express the exceptional potential of the finest grape varieties. VINIFICATION AND MATURATION
After pressing the grapes, the unclarified juice is kept at 2°C for 7 days, a process known as cold
stabilisation. This operation allows for the extraction of aroma precursors present in the solid parts of the lees. The juice is then clarified and ferments at 18°C for about 15 days. It is crucial not to ferment below this temperature to reveal the aroma precursors, which will impart citrus notes. After fermentation, the wine remains in tank on its fine lees for 4 months to perfect its bouquet and structure.
TASTING NOTES
Its pale yellow colour with green reflections hints at a vibrant nose, blending aromas of citrus and exotic fruits, enhanced by a subtle floral touch. On the palate, the lively and refreshing attack gives way to an elegant texture, perfectly balanced between tension and roundness. The saline and persistent finish prolongs the pleasure with mineral notes, a signature of its terroir.
FOOD AND WINE PAIRINGS
This Sauvignon Blanc pairs perfectly with all seafood dishes and canapé-style appetizers. It may even surprise you by enhancing goat cheeses.
